7 Healthy Meals that are not Bland nor Boring

I think I’m experiencing writer’s block. I’ve been sitting here, staring at my screen for who knows how long now, trying to figure out what to say. But honestly, I don’t really have much to say right now. I’m just feeling lonely. Actually. this is a perfect moment for a song to describe how I’m feeling when I don’t seem to have the words.

In fact, this was my first time watching the music video. I feel like I could have starred in it. Also, just another quick side note, this group. Rudimental, is amazing and one of my absolute favorites. Their music is like a mixture of electronic and soul-it’s so odd that it’s great, and it’s very uplifting and motivational. Now back to what I was saying before.

I am very experienced in living a lonely life. For example, the past year I have lived in a studio apartment by myself. However, I have never felt more alone than this summer. I’ve come to realize that I have very few friends in Austin. Basically, I spend my days by myself. Like I could easily go 3 days without having a conversation with someone (unless you count saying hi to the employee who checks my id at the gym). How sad is that?

Also, because it’s summer and I’m only taking one class right now, I’ve had more free time than I’m used to. So my life has consisted of class, work, gym, Netflix, and lots of cooking because I have no one to go eat with me. On the downside…that’s a pretty boring life to me. If only I had some shows to go see this summer would I be perfectly content with being on my own. However, this is not the case. So on the bright side..my boring life gives me lots of time to cook!

What have I cooked this summer?

1.   Pizza!

I actually made the pizza this week. It’s so good! I’ve wanted to try making my own pizza for a long time, and surprisingly it’s very easy and fast. I bought an organic pre-made crust and just added all of the toppings that I wanted: ground turkey, spinach, yellow bell pepper (not shown because I forgot to put it on), and mushrooms. I’ve been eating roughly a quarter of the pizza per sitting, and I say sitting because there are multiple sittings in a day. In fact, I had two sittings today so I have to go to the grocery store to buy another crust.

2.   Sushi!

This was also relatively easy. In my roll I have chicken teriyaki, quinoa instead of rice, and celery. I found out that it is a very good idea to invest in a sushi roller. However, I still couldn’t figure out how to cut the sushi…so I just ate it like a wrap. Also, wasabi and soy sauce were a must with this dish.

3.   Pineapple chicken

This chicken was amazing, and the recipe can be found here, on BodyBuilding.com. I just added my favorite, steamed broccoli. Also, I discovered my love for microwave rice. The specific rice I used was actually a combination of  quinoa and brown rice, and was very tasty and fast. I love when cooking is fast. I just can’t wait to eat the food that I’m making.

4.   Burrito Bowl/Salad

I’ve made a healthy version of Chipotle’s burrito bowl a couple times. However, this time I made it more of a salad by adding lots of kale and spinach to the original. The original Sadie’s burrito bowl includes quinoa, chicken, black beans, avocado, salsa, and a sprinkle of cheese.

5.   Spaghetti

This spaghetti is different from the normal spaghetti that I make because I added spinach, zucchini, cherry tomatoes ground turkey, and mushrooms to it. This will definitely be one of my go-tos.

6.   BBQ Chicken Sandwich

Last week I was craving BBQ, so I made my own BBQ chicken sandwich. On the sandwich is spinach, tomato, lots of pickles, BBQ sauce, and a slice of cheese between two slices of sprouted whole wheat bread. I also made some sweet potato fries and baked green beans. These baked green beans are my new favorite. As usual they are seasoned with salt, lemon pepper, and lemon.

7.   Protein Pancakes

I made these babies on the 4th of July. I used my chocolate protein to not only add some chocolate flavor, but also to get some protein in me at the beginning of the day. Unfortunately. these weren’t that good. I’m just going to have to keep researching on how to make protein pancakes fluffy.

Well those are the 7 of my most recent meals that I’ve made. As per usual, I’m writing this late at night. And as usual, I have something very important going on in the morning, this time it’s a finance test. However, I don’t know how well I’m going to be able to sleep tonight. My air conditioner appears to be broken. Lovely. Just another reason why I’m so happy to be moving out in less than 10 days even though that means I’ll be homeless for the following 14. Blah, I think I’m going to make a list about how bad my apartment was this last year. Until then, goodnight!
